Anti-Cancer Recipe: Salmon Patties To Live For

And serving them salmon patties for breakfast is the greatest way to kick the morning carb habit. Salmon for breakfast? It’s a Martha Stewart favorite.

Salmon Patties To Live For      Makes 8 patties

(adapted from jittery cook’s salmon-watercress latkes)

2 cans salmon—pink or sockeye (Choose from our approved can list)                                                                                                                                            

1 small yellow onion, diced finely

¼ cup whole grain bread crumbs

2 organic eggs (high omega 3, if possible)

2 scallions, chopped finely

1 bunch watercress, chopped finely

3 t fresh basil, chopped finely

2 T tangy mustard

Salt and pepper to taste

Mix and mush, and let sit for a few minutes to gel. Form 8 patties, and bake at 325 F (165 C) for 20 minutes. Serve them hot or cold along with a bit of your favorite topping –more mustard or horseradish, a sugar-free mango chutney, a squeeze of lemon alongside a heap of kimchi (another jittery cook suggestion). Or try jitterycook’s mayo-chipotle blend with Veganaise’s purple grapeseed mayo. For more anti-cancer benefits, add a super kale salad. Patties good for breakfast, lunch, dinner or guilt-free snacking.
